Preparation Instructions:
1. Preheat your oven to 180°C (356°F).
2. Remove the chicken from packaging and pat dry with paper towels.
3. Place the chicken in a roasting pan, breast side up.
4. Season the chicken generously with salt, pepper, and any desired herbs or spices.
5. Add chopped vegetables like carrots, onions, and potatoes around the chicken for added flavor.
6. Cover the chicken loosely with aluminum foil.
7. Roast the chicken in the preheated oven for approximately 20 minutes per 500g, plus an additional 20 minutes. For a chicken weighing 1.4 – 1.6kg, this would be approximately 1 hour and 10 minutes to 1 hour and 20 minutes.
8. Remove the foil during the last 30 minutes of cooking to allow the skin to brown and crisp.
9. Ensure the chicken is cooked through by inserting a meat thermometer into the thickest part of the thigh; it should read 75°C (167°F) when done.
10. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
