Fermentation & Maturation:
Grapes picked between 6am and 10am ensure for grapes arriving
at the winery Below 14 degrees Celsius. Destalked and pressed to inox
settling tank for 2 days. Clear juice racked to stainless steel fermentation
vessel. A 17 day fermentation took place @ 13, 5 degrees Celsius.
Only bentonite finings were used before a light filtration prior to bottling.
Pale, greenish gold. Reflecting classic aromas of elderberry flower and green
fig on the nose And crisp, green litchi flavours on the palate.
Baleia’s food-driven wines present a delicate sensation of minerality which
is expressed by natural salts fount in the soils and prepares
the palate beautifully.
